If I claim just one character, it means I can pair the character with anybody right? as long as the story still revolves around him. ^_^

Yes.

For example, if I were to claim Faith from Buffy the Vampire Slayer the ten stories that I write about her, can all be just about Faith on her own (or interacting with other characters in a platonic way) or they can each be about Faith with a different character in a shippy way.

It's only if I were to claim Faith with a specific character would I need to write each fic about Faith and that person in a relationship of some sort (either romantic or otherwise.)

I saw that you can do general series, one character, pairing, and threesome as your claim so I was wondering if it was all right to claim a group? Like the fandom I'm thinking of is Transformers, and they have groups all over the place, like the bigger ones being Decepticon faction, Autobot faction, then going smaller into things like, medical group, scientists, tactical, and into gestalt teams like protectobots and constructicons.

So could I claim one of these groups, and could I feasibly do a group/group interaction claim?

The only thing with group claims is that you would have to have a good number of the group in the fic with more than just a "oh hey there's so-and-so sitting over there." I would say you have to have least half of the group in the fic in an active role.

For a group/group interaction claim, you would probably be better off taking a general series claim. Then again, if each group consists of three characters (so we're looking at 3 characters interacting with 3 other characters) that would probably be okay.

The general series claim does not mean that each of your fics has to be gen in nature, but it allows you to play around with all of the characters instead of just one or two.

It does, and I just asked because I tend to do gen anyways, and it's sometimes hard to write for certain characters in this fandom without the rest of the group playing a part due to certain canon things, and a lot of challenge places tend to not like that much focus on those not part of the claim. So it wouldn't be hard to have all or the majority of the group in the fic for me, just wanted to make certain on that.
